Disarm arm and Stun.... You set them in Razor/Steam/Sallos... Need 80 arms 80 wrestling for disarm and 80 anat 80 wrestling for stun.

Those are wrestling special attacks.
There are also special hits:
Fencing + anatomy gives chance for paralyzingly blow.
Mace fighting + Anatomy gives chance for crushing blow.
Swordsmanship + Anatomy gives chance at concussion blow.
Special moves on the other hand are related to weapons and each weapon has a primary and secondary move. This is an AoS feature that also absorbed the above specials into a single system.
UOF is a pre-AoS shard and doesn't have special moves. The naming conventions above are what are era accurate for peer-AoS.
