All creatures have a "home" location (typically at the location of their spawner). When a creature is too far away from its home location, it tries to walk there. When walking, they don't use any smart pathing algorithm, so they can get stuck on shorelines or mountains.

It could be that the creatures were tamed on one island and released on another, like @Kareem said. When they try to walk home, they get stopped by the shoreline.

It could also be that the spawner for those creatures is on another island. If the spawn range is big enough, the creatures may accidentally spawn on a nearby island (the island you are on). Again they will get stopped by the shoreline when they try to walk home.
