Can someone tell me what skill gain is like? I know in dungeons it's boosted but what about from a home? I'm trying to raise carp and the boards are so heavy going back and forth to a dungeon isn't really feasible when I can burn through 1600 boards on a pack horse in no time. Should I just work out of the bank?

You should be able to fit more than 1600 wood on a pack horse, that's only 160 stones.

I GM'd carp in Skara Brae at the bank, 1,000 logs at a time. Took about 4-6 hours.

I also think the hard part right now is making objects that take so many logs. I could do shields but the gain on shields isn't that much. Writing tables are better gain until you can make staves but use up a ton of wood.

Was that 1000 logs go to dungeon, back and forth?
No, I stood in the armory across from the bank and took 1000 logs out at a time (100 stones) and macroed what ever I was gaining on. I used the guide in the wiki: at 95, I used skill scrolls to get to 110. 50 - 95
0-50: Buy from NPC
50-68: Wooden Shields
68-74: Fishing Poles (Requires 40.0 displayed tailoring skill, train from NPC)
74-80: Quarter Staff
80-100: Gnarled Staff

I've tried to put more than 1600, they weigh 1 stone a piece on boards.
Use logs as they are 10 logs = 1 stone. My fletcher brings 1500 logs to the brit crafting area to grind out bows.

*In town took around 60-70k logs for carp 50 - 95 and about 40-50k logs for fletching
 
I think some of the wood you have is retaining the old weight system. Just completely burn through that heavy pile and DONT ADD ANY WOOD TO IT! create a separate pile and you will see that it weighs as much as ingots now, which is sweet. The same thing happened to me soon after the change was made a while back.

also if you go to the crafting area (the blacksmith closest to brit graveyard) you get a % off what you make in materials, so like a 6 log chair only costs 5 logs
