Sounds like it only checks for statue chance on death? Else I could just re-tame and re-release on end to farm statues?

Only animal lore. Now with the exception of dex below 100 (which I've never tested myself), your stats don't really get trained or increased. Only skills like wrestling or magery etc get raised trough prolonged usage.
