Zombie are never paragon or holiday mob since I think that depends on how much fame they give or something. Above a certain amount of fame that the monster gives, it has a chance to be paragon/holiday hue. Certain mob are never paragon/holiday like zombie or ratman or something.

Rare case I know of is in Ankh where a mummy and hell hound are paragon but I think it's a bug...

Oh yeah someone above said they got a statue like this off a zombie and I just mentioned that zombie would never be holiday hue because they never spawn that way.
