EDIT: This is an old guide. The locations of the stuff I tamed in Fire has been changed. The mobs are still there, but the locations are different. The general guide is still correct though
I'll start off by saying that I didn't train all the way to GM, I went to 91 real skill and used skill scrolls to GM. It took me about 2 weeks go to from 50 to 91. Here's what I did:
Started my character with 50 taming, 50 magery. First thing I did was lock animal lore at 0. I'm not sure if this helps or not, but I was under the impression that you'll fail more with lore at 0, and failing more = good. Then I went on to GM Magery, Med, Eval, Peace, and Music. Music and peace are the most useful of those listed. It's a good idea to atleast have a decent amount of magery, 80 minimum. I also trained hiding a bit as it's useful as well. The key to gaining as fast as possible is training in dungeons, which is where I did 90% of my taming. And when taming in dungeons, peacemaking is absolutely necessary. Obviously, training in dungeons brings the possibility of being pked, which is why it's nice to have a decent amount of magery (to recall, cast reflect, heal etc), and hiding. With all that being said, here is how I trained...
From 50 taming, I went straight to the first level of Shame and worked on scorpions. In the first level, theres 8-9 scorpions all in the same area:
The area outlined in red is where the majority of the scorpions spawn. Simple...peace/tame one, and drag to the surrounding earth elementals to kill. Rinse and repeat this to ~78 shown taming
Next, head to Fire dungeon. Fire dungeon is full of stuff to tame, and you can GM off mobs in here. What you wanna work on now are the small hellcats.
The area in red is where I did most of my small hellcat taming. In that corner spawns 3 small hellcats, and 1 large hell cat. Again, what you wanna tame are the small ones. It's simple, I would drag one small hellcat to the other side of the wall and peace/tame non stop until you tamed it. Once tamed you could either drag it to some surrounding spawn, or release/kill it which is what I did. If you run around Fire dungeon, you can find more small hellcats, I just found that specific corner to be the easiest. This is where it gets easier, because little by little you can start introducing new mobs to tame. At 80.7 you can start taming Lava Lizards. I didn't really start those til around 83 shown taming, because at 80.7 you will almost never gain and it'll be a waste of time. Similar with the small hellcats, there are Lava Lizards scattered all throughout Fire. So continue taming small hellcats and lava lizards til around 87 shown, then you can target hellhounds. Again, you need 85.5 shown taming to attempt hell hounds, but you'll rarely gain at that point so wait til around 87 or so. In the yellow outlined part of the map is another good spot, because theres small hellcats, hell hounds, and lava lizards that all spawn in that little area. So continue peace/taming those and you should be seeing good gains. At around 90 shown taming I started doing the large hell cats, which there are tons of in fire dungeon. I did large hell cats til ~92 shown taming(91 real). From then on, you can GM off the large hell cats, as well as taming all the other things listed. Like I said, I decided to use skill scrolls to GM, but it only took me 2 weeks of moderate taming to get to 91.
There are plenty of other things you can tame to gain off of, those are just the mobs that I used. At 59.1 you can gain off great harts, and at 71.1 taming, you can gain off bulls. Every once in a while I would hit up the jhelom pens and tame the bulls there, or just wander around the land taming pretty much everything (bears, harts, hinds, horses etc). Doing this actually got me some good gains, as I found plenty of pretamed animals. Pretamed animals are harder to tame, and therefore have more chances to gain.
When taming, I made a macro like this:
Use skill peacemaking
waitfortarget (edit timeout to 1)
last target
Use skill animaltaming
waitfortarget (edit timeout to 1)
last target
loop
This macro would attempt to peace and tame nonstop with virtually no delay. What I would do is target the monster to tame, hit play, and switch to my alt. I would have it so that my alts client was overlapping half my tamers client so I could see my tamers health, as well as anything on the screen (i.e, if a pk would show up), all while farming on my alt.
Quite possibly the most important part of all this: ALWAYS keep food/water on you to stay full. Also, if you have enough magery, have magic reflect up at all times just in case a pk comes.
Like I said, this is just the way that I trained taming. Here is a good site that shows animals and monsters, along with their minimum taming skill requirement: http://www.uoguide.com/Tameables#Monsters. You could pretty much pick anything close to your taming skill and gain off it, and it's good every once in a while to change things up.
Hope all this makes sense. Good luck, now go GM taming
